Sparkling wine Bon Castello Chardonnay is made exclusively out of variety Chardonnay. It fermented in bottles by the classical method and aged for at least two years. Bon Castello Chardonnay aged in Pula’s underground tunnels Zerostrasse created during the First World War. Tunnels are of exceptional historical significance in terms of the importance of Pula as a military city. They are spread below the entire millennial city and with their history and attractiveness are set as an unavoidable tourist destination.

Sparkling wines are kept in Pula’s tunnels because the tunnel system enables proper air flow and thus keeps temperatures at the same height throughout the year or varies minimally between 14-18 °C. The given conditions favor the structure and aroma of sparkling wines, without changing their quality.
